A typical speciality of Modena's tradition, Principe's precooked Cotechino is a IGP – Indicazione Geografica Tipica (PGI) product, i.e. it is awarded the label of Protected Geographical Indication because it is produced in its land of origin. It is a mixture of lean pork meats and rind, stuffed into natural casings, skilfully seasoned with salt, pepper, nutmeg, cinnamon and cloves. Sealed in sterilised packages, Principe's Cotechino is precooked and ready to be consumed after being heated for 20 minutes in boiling water.
